KATVIS PINOT NOIR 2021 Unfined and unfiltered, WO Elgin

This remarkable Elgin Pinot Noir is the ‘must buy” red of this release. Only 6,200 bottles were produced (516 cases) and the LCBO bought the last 225 cases available. Surprisingly deep intense purple in colour, it has a lovely, intense, ripe, plum-crancherry-raspberry purée nose with bright rose-violet floral notes along with a touch of elegant cedar and buttered toast. It is dry, medium-full bodied, well structured, intense and mouthfilling with intense, ripe, plum-cherry-raspberry-cassis flavours followed up by a lingering, faintly smoky, complex, toasty, faintly savoury finish. Two classic clones of Pinot Noir (777 and 115) were pigeaged by hand for a week long cold ferment and then gently pressed into old 300L French barrels to finish fermentation & undergo malolactic where it was matured for 11 months. This was followed by barrel selection - only 13 barrels were chosen and blended in a stainless steel tank for a further 8 months to settle. Bottled unfined and unfiltered. It has 13.1% alcohol and 1.4 g/L residual sugar. CSPC 33306
