NEW in Vintages. Youthful deep intense purple colour. Intense, youthful, very slightly spicy, faintly herbal, still somewhat closed, plum nose with some faint minerally-sandalwood notes. Dry, medium to medium-full bodied, youthful, slightly grippy, firm, plum-crancherry fruit flavours with a lingering, rather high acid, crisp, faintly peppery, cassis-tinged finish. A tad leanish at the moment, it should flesh out with another 3-4 years of aging. It has 13.9% alcohol and according to the LCBO 3 g/L residual sugar. TASTING NOTE: The 2021 Cabernet Sauvignon Metier is unexpectedly fresh with zesty red berries, peppery florals and wild herbs. It boasts tart red fruits and inner herbal tones with mineral underpinnings, all kept nicely in check by zesty acidity. This finishes with a staining wild raspberry concentration and grippy tannins that frame the style well. The Metier Cabernet Sauvignon is produced mostly from Candy Mountain fruit.
