I retasted the original Coravin bottle on September 14 (first assessed for August 5th release) & discovered that it tasted even better today in my ISO glass. Here is an elegant and yet quietly powerful, extremely well-made Santa Barbara Chardonnay that will appeal to discerning new world fans as well as to classic Burgundy devotees. The reason is the use of ripe (but not overripe) grapes along with just the right amount of perfectly air-dried premium French oak. Bright pale straw colour with an intense, bright, minerally, lemon-apple meringue nose with gently toasty, brioche notes. Dry, medium bodied, intense, bright, ripe, lemon-apple meringue flavours which are well structured with lovely mouthfeel and balanced by excellent acidity and elegant gently buttered toasty notes on the lingering finish. Shades of a great Meursault at a bargain price, it has 12.7% alcohol and under 2 g/L residual sugar. Only 600 bottles released CSPC 28952

TASTING NOTE: The 2021 Chardonnay overdelivers for its appellation-wide status. It has pretty scents of quince, poached pear, spring honey, chalk and roasted almonds. The medium-bodied palate is satiny, savory and expansive with dynamic flavor layers and a very long finish. Drink date: 2022-2030.
