This fairly elegant albeit individualistic Retsina puts a new spin on the ancient resinated wines of Greece which date back over 2,000 years. Bright and extremely pale straw colour, it has an intense, spicy, complex, minerally, lemony nose (reminiscent of Chardonnay but actually 100% Assyrtiko) with hints of freshly-cut pine. Dry, medium bodied, slightly spicy, intense, complex, bright, lemon-apple flavours with a lingering, lime-thyme-tinged, high acid, mineral-driven finish. Great with spicy, off-the-grill seafood, it has 13% alcohol and 3.7 g/L residual sugar with lot number LN21 on the front label. The fermentation takes place in new oak barrels of varying origins and types followed by ageing for 6 months on the lees with regular bâtonnage. |
