This unique partial-appassimento is an ever-changing blend that this time has a fairly deep purple-red colour. The nose shows good complexity with somewhat earthy, ripe, plum-crancherry fruit along with cedar-sandalwood notes. It’s dry, medium bodied and quite well structured with intense, bright, ripe, plum-crancherry flavours followed up by a lingering, crisp, cedar-sandalwood finish. It has 13.6% alcohol and 3 g/L residual sugar. It’s a new blend of 88% Cabernet Sauvignon (was 53%) and 12% Cabernet Franc with no Syrah (was 25%). A total of 2/3 of the Cab Franc grape clusters (or 8% of the total wine) are kiln-dried for 100 days taking sugar levels to 31º brix (from 21º for fresh portion). The final blend is aged for 16 months in French and American oak. The lot number 29210824 appears on the lower part of the glass bottle. |

TASTING NOTE: A blend of 88% Cabernet Sauvignon and 12% Cabernet Franc, this wine is made in a partial appassimento style with some (8%) of the fruit being dried before winemaking. The wine spends 16 months in a combo of French and American oak, creating a rich, round mouthfeel. Expect stewed blackberry, cherry and clove and pair with caramelized-eggplant pizza, or seared duck with huckleberry sauce. |
