ON SALE FROM DECEMBER 28 - $32.70 OFF - now $136.25. Assessed from a bottle purchased at the LCBO. OK it’s exactly 6 pm on a rather cooling, cloudy Labour Day and this is the last wine I am tasting for the release. I am excited because I have never tasted the AYALA CUVÉE PERLE D'AYALA BRUT NATURE before - and it is the 2006. It has a very bright medium straw colour with an abundant streams of small bubbles. As the wine sits, the bubbles become increasingly tiny! The expansive bouquet immediately shows its class with an intense, gently complex, warm, buttery, French brioche notes along with an elegant touch of minerally lemon meringue. It’s dry, medium bodied, and wonderfully silky on the palate - beautifully balanced, well-textured and harmonious with touches of ripe Mirabelle plum and apple-apricot meringue plus some mineral-tinged, gently toasty notes on the long, lingering, still-fresh finish. This wine is wonderfully harmonious - it soars and caresses. And that is the secret that makes it go perfectly with almost anything. This 100% Grand Cru blend of 80% Chardonnay (my favorite!) and 20% Pinot Noir with 12% alcohol, 6.43 g/L tartaric acidity and 6 g/L residual sugar with lot number L2020A7B01 and then DEG:01/2020 on the capsule. The tirage for the 2006 was on July 16, 2007 and degorgement in January 2020 meaning that it had 150 months (12.5 years) on the lees. The back label refers to a \"8-year aging process under cork\" so this will definitely be different from earlier disgorged batches which is done two to three times year. CSPC 288340
