TASTING NOTE: Vineland Estates calls this wine the \"unicorn,\" since it's the rarest of their varietal bottlings. Given that the 2015 vintage was challenging, the optical sorting machine at the winery removed nearly a third of the fruit! The results in the glass prove this extraordinary measure was well worth it; this is a deep, impeccably balanced Cab showing pure cassis, woodspice and vanilla. Savour it over the next decade with blackened mutton or beef in a reduction of red wine and rosemary. (Vintages panel, March 2018) |
