Andrew Symington’s Signatory group was named the 2002 Independent Bottler of the Year by Whisky Magazine. The independent bottlers buy up individual barrels of whiskies from distillers, age them to their timeline and bottle the single barrel offerings under both the distillery’s and their own names. Although the whisky is quite light in flavour, it has a distinctive complex … and nutty, rooty saltiness … House style: Salt, hay. Oily, spicy chocolate. [Enjoy] after a hearty walk, before dinner. (Michael Jackson, Malt Whisky Companion, 4th Edition, 1999) |
