Very bright light yellow colour with good effervescence. Intense, fairly complex, minerally, ripe, lemon meringue nose with some attractive, faintly toasty notes. Dry, medium bodied, very bright, very slightly spicy, ripe, lemon-apple meringue flavours with a harmonious, lingering, minerally, gently toasty, harmonious finish. Showing nicely now. This 50-50 blend of Chardonnay and Pinot Noir has 12% alcohol and 8 g/L residual sugar. Unfortunately, the actual disgorgement of this batch is unknown which limits the relevance of the three-year-old tasting note from 2023 quoted by the LCBO which was disgorged in November 2021. TASTING NOTE: This is in a new bottle, like the stout ones used for the rosé and blanc de blancs. This is very structured with a density and richness with hints of strawberry to the apple character. Bubbles turn fine textured at the end. Delicious flavors of biscuits and dried apple in the finish. Special character to this because of the very ripe vintage. Disgorged in November 2021. This is half chardonnay and half pinot noir. This can age well due to the phenolics. Drink or hold.
