| Bright light straw colour. Intense, complex, slightly spicy, mineral-driven, ripe, lemon-apple meringue nose with some buttered toast notes which is attributable to 10 months lees-aging in concrete fermenters (no barrel aging). Dry, medium-full bodied, lemon-apple meringue flavours with a bright, slightly toasty, lingering finish. This would work well with seafood and poultry. It has 13.2% alcohol with under 2 g/L residual sugar and 6 g/L total acidity. Recently bottled on April 9, 2025 it should taste significantly better in 12-18 months as it slowly recovers from bottling shock. |

| TASTING NOTE: Made from 100% estate fruit organically grown on the Beamsville Bench. Fruit is whole-bunch pressed before fermentation in concrete using ambient yeast, after which the wine is aged 10 months in concrete and an additional eight in stainless steel before it's bottled unfiltered. Expansive and textured, it evokes lemon oil, crunchy yellow apple, oyster shell and sea salt and features a long, luxurious finish. |
