Last appeared in Vintages (***) on October 1, 2016. Clear and colourless. Bright, slightly spicy, honeyed, warm rice nose. Fairly dry, medium-light bodied, honeyed, slightly spicy, floral warm rice flavours with a lingering, unoaked finish. According to the LCBO this new batch has 16% alcohol and 24 g/L residual sugar. TASTING NOTE: The rice for Junmai Ginjo is polished to a higher degree than for Junmai, producing a more delicate, complex, lighter experience. The Hanagaki Junmai Ginjo Sake offers impressive, layered notes of spice, banana, mint, nuts and pear. Crisp and fresh with a fine acidity, it will be a great match for salmon or carrot lox.
