Bright pale straw colour. Fairly intense, somewhat spicy, youthful, faintly herbaceous nose with apple-lemon-melon ruit along with some mineral notes. Dry, medium bodied, bright, youthful, ripe, lemony-apple flavours with a lingering, crisp, chalky-mineral finish. A small portion was fermented for 5 months in neutral French oak. Still needs time to evolve - it improves with decanting. Great for seafood, pasta and spicy dishes, it has 12.7% alcohol and 2 g/L residual sugar with a hefty 6.6 g/L total acidity and lot number L250520 on the lower part of the glass bottle. CSPC 25368

TASTING NOTE: This Sauvignon Blanc sourced fruit from two Niagara vineyards and vinified it partly in neutral oak and partly in stainless steel. The end result is a complex wine brimming with fresh citrus, mango, pineapple, pear, river pebbles and freshly cut grass. Pair with shrimp tempura, fish tacos, or creamy pasta with mussels.
