Bright light straw colour. Intense, complex, mineral-tinged, llemon-apple meringue nose with some buttered toast notes which is attributable to 10 months lees-aging in concrete fermenters (no barrel aging). Dry, medium plus bodied, lemon-apple meringue flavours with a bright, slightly toasty, lingering, delicious lightly-saline-savoury finish. Tastes like a top Chablis, it would pair well with seafood, poultry, white meats and vegetarian dishes. It has 13.5% alcohol with under 2 g/L residual sugar and 6.3 g/L total acidity. Recently bottled on April 6, 2026, it will even taste better in 12-18 months as it recovers from bottling shock. Screwcao closure. CSPC 45618

TASTING NOTE: Made from 100% estate fruit organically grown on the Beamsville Bench. Fruit is whole-bunch pressed before fermentation in concrete using ambient yeast, after which the wine is aged 10 months in concrete and an additional eight in stainless steel before bottling. Expansive and textured, it evokes lemon oil, crunchy yellow apple, oyster shell and sea salt and features a long, luxurious finish. Pair with crab cakes with citrus aioli. Price $ 29.95
