| ESTATE BRUT ROSÉ SPARKLING VQA Beamsville Bench, Niagara Escarpment, Traditional method |
| Vintage Assessments Tasting Note |
Producer |
CAVE SPRING |
| NEW in Vintages. Bright medium salmon-pink colour with lots of extremely tiny bubbles. When initially poured it has a very youthful, somewhat peppery, rather leesy nose with hints of dusty dried red apple. It takes a moment or two for the attractive, gently toasty, ripe, plum-strawberry fruit to emerge. Dry, medium bodied, fairly intense, quite nicely textured, ripe plum flavours with some toasty, crancherry notes on the lingering, gently minerally, warm brioche finish. This 100% Gamay Rose Brut was disgorged in June 2025 after three years on the lees (tiraged on June 2022) and has 12% alcohol, 4 g/L residual sugar and a hefty 7.7 g/L total acidity. Note that the whole cluster juice was aged sur lie for only 8 months in neutral 225L oak barrels prior to being tiraged. |

TASTING NOTE: This gamay-based rosé is a low-dosage Brut with a vibrant and savoury character. Delicate but lofty lees keep the fruit afloat on the palate that is marked by flavours of cranberry, cherry, lavender, thyme and chalky minerality. Pleasantly nervy with a mouthwatering, palpable tension. Versatile with food but suggested pairings include miso salmon carpaccio or deep-fried calamari. Tasted April 2024. Score - 91 (Sara d'Amato, winealign.com) |
