| Made in the classic Champagne tradition with fermentation in the bottle, this 2021 has a bright pale yellow colour with with a fairly intense, gently complex, slightly toasty, bright, lemon-apple nose along with some chalky-mineral notes. Dry, medium bodied, slightly spicy, bright, lemony-yellow-apple and pear flavours with a crisp, faintly citrusy, minerally, gingerbread-tinged finish. It well textured and would be perfect with that special Sunday brunch. Favourful, bright and ready-to-enjoy, this new 2021 is now Pinot-Noir-driven with 49% (vs 20% in 2020) along with 23% Chardonnay (down from 50%), 22% Pinot Meunier and 6% Pinot Blanc. It has 12.2% alcohol, under 3 g/L residual sugar and was aged on its lees for four years meaning that it was disgorged earlier this year and should improve over the next year. |

| TASTING NOTE: This single-vineyard blend of 49% Pinot Noir, 23% Chardonnay, 22% Pinot Meunier and 6% Pinot Blanc was aged for five years on the lees. It's a crisp, dynamic expression of excellent bearing, elegance, structure and complexity, with touches of peach, grapefruit, orange citrus, biscuit, brioche, vanilla, and a distinct, characterful mineral note. Pair with fried foods, or pork tenderloin with lemon and capers. |
