CAVE SPRING |
| This best-yet Cave Spring Estate Grown 2024 Cab Franc has a bright fairly deep purple-red colour. The nose is slightly spicy and intense with lots of bright, ripe, plum-crancherry-strawberry fruit along with some gentle minerally, slightly cedary notes. Dry, medium plus bodied, bright, attractive, ripe, plum-cassis-cranberry flavours with a lingering, crisp, very faintly minerally, well-textured, gently cedary finish. A very well-made, fairly approachable, crowd-pleasing Cab Franc with good structure that is capable of additional aging and improvement. Just bottled in January 2026, it has 14% alcohol and 2.5 g/L residual sugar and, most important, unfiltered with 20% being bled off the skins to barrels where it was aged for 14 months (75% in 225L neutral oak, 20% in 500L neutral oak and and 5% in new 225L French oak). Worth laying away. |

| TASTING NOTE: From one of Niagara's most reliable premium producers, this characterful, consistent, charming Cabernet Franc is ripe and concentrated, with generous blueberry, black fruit, cassis, forest floor, roasted red pepper, savoury herbs, earth, coffee, and lifted mint tones. Polished and enjoyable, it's drinking beautifully now and will continue to evolve into the mid 2030s. |
