| Bright medium-light yellow colour. Intense, slightly spicy, faintly honeyed, ripe, melon-lemon-apple puree nose with some toasty vanilla notes. Dry, medium plus bodied, slightly spicy, bright, ripe, lemon-melon-apple meringue flavours with a lingering, rather toasty, fairly high acid, nicely textured, minerally, still slightly leesy finish. Harvested from 49-year-old vines, the must was fermented for 4 months in French oak followed by aging for 18 months in a variety of barrels. It has 13% alcohol, 2 g/L residual sugar and a hefty 6.5 g/L total acidity with lot number 2024094 on the lower part of the glass bottle. While it still needs time to come together, in the meantime it should pair well with a lobster bisque as well as game birds. |

It shows attractive notions of hazelnut, ripe apple, crème brûlée, vanilla extract and stony mineral, with a suggestion of coconut on the finish. Pair it with grilled salmon, lobster with wild rice, or stuffed pork tenderloin. |
