BACHELDER |
Bright pale straw colour. Complex, fairly intense, very slightly spicy, minerally, bright, ripe, lemon peel nose with some attractive, slightly waxy, toasty notes. Dry, medium bodied, quite well structured, fairly toasty, bright, ripe, lemon-apple meringue flavours with a lingering, fairly high acid, minerally, toast-tinged finish. Needs a bit more time to evolve. Fermented with native yeasts and aged for 20 months in mature French oak barrels, it has 13.5% alcohol and under 2 g/L residual sugar with lot number L2023-06-02 on the lower part of the glass bottle. |

TASTING NOTE: A bijou in the illustrious Bachelder catalogue, this Chardonnay is made from some of Ontario's oldest-known vines. Offering a dense, concentrated flavour profile, it was fermented with native yeasts and aged for 20 months in mature French oak barrels. Expect Ontario peaches, white flowers, lemon zest and a touch of honey all wrapped in a soft, waxy texture. Best from now until 2028. |
