Assessed from a bottle purchased at the LCBO. This outstandiing100% Sauvignon Blanc originates from high-altiitude old vineyards in Simonsberg. This combined with 100 days of aging on the lees gives it great intensity and complexity. Bright pale straw colour, it has a very attractive, gently grassy, rhubarb-lemon-meringue nose with some faintly leesy notes. Dry, medium-full bodied, well structured, slightly spicy, bright. ripe, gently grassy. lemon-apple-pear meringue flavours with a very crisp, lingering,faintly savoury, fresh, lime-tinged finish. Excellent mouthfeel. Has 13.5% alcohol and 2 g/L residual sugar with lot number 20200408 on the lower part of the glass bottle. It will still improve with age - give it 2-3 years.

TASTING NOTE: Back to being a pure Sauvignon Blanc after a flirtation with some added Semillon, Professor Black hails from a cool site at 300 metres. Floral and herbal, it has some leesy weight and flavours of passion fruit and grapefruit. Drink date: 2021-2024.
