Assessed from a bottle purchased at the LCBO. From the rugged mountain vineyards of Sonoma’s Knights Valley comes this solid, dense, intense, fruit-driven, still-youthful 100% Cabernet Sauvignon to capture your attention especially when served with a perfectly cooked bone-in rib steak. Extremely deep intense purple colour, the slightly spicy, intense, mineral-tinged, ripe, plum-cherry-cassis nose comes with elegant cedary notes. Dry, full bodied, well structured, dense, intense, ripe,rich, plum-black-cherry-cassis flavours with a youthful, mouthfilling, complex, lingering, very faintly herbal, high acid, complex, cedary finish. This 100% Cabernet Sauvignon was aged 20 months in French oak (63% new) and was bottled unfined and unfiltered. Has 14.5% alcohol and 2 g/L residual sugar with lot number 20180808 on the back label. TASTING NOTE: The 2016 Cabernet Sauvignon Latro is in the same ballpark yet has more savory characteristics as well as plenty of conifer, California bay leaf, currants, and loamy soil aromas and flavors. This full-bodied beauty has plenty of tannin, terrific purity of fruit, no hard edges, and a great finish. Give it a few years. Maturity: 2021-2036.
