Assessed from a bottle provided by the winery and is currently available as a Vintages Essential. Bright light straw colour. Gently spicy, faintly honeyed, floral, warm, ripe lemon-melon-apple purée nose with some toasty notes. Dry, medium bodied, quite well structured, effervescent, fairly intense, ripe, harmonious, lemon-apple meringue flavours with a lingering, bright, gently toasty finish. Made in the traditional (classique) method, this 100% Chardonnay has 12.7% alcohol and 5 g/L residual sugar. Only 250 cases produced. Unfortunately, there is no lot number or any indication when this 2016 was disgorged. Contrary to the “18 months on lees” tasting note appearing in the Vintages Catalogue (and website), this wine remains ‘on the lees for a minimum of two years and is disgorged just before it leaves the winery’. Professionally speaking, based on the taste and condition of the cork, I know that it much longer than this - in fact it was closer to 36 months on the lees. CSPC 423111

TASTING NOTE: This traditional method chardonnay spent 18 months on lees, and is disgorged with 4.6 g/L RS just before leaving the winery. Green apple, biscuit, lemon, lees, rule the streamline palate, layered with ample minerality, which finishes with a limestone buzz. Impressive.
