Assessed from a bottle purchased at the LCBO. Extremely deep intense red colour. Intense, complex, slightly spicy, gently cedary, sandalwood-tinged, elegant, ripe plum nose with faint floral hints of roses. Dry, medium-full bodied, well structured, fairly dense, ripe, gently complex, intense, sandalwood-tinged, ripe plum-cherry-cassis flavours with a lingering, gently cedary, harmonious, bright finish. This classy 100% Cabernet Sauvignon was aged for 16 months on fine lees in new oak. It has 14.5% alcohol and 3 g/L residual sugar with lot number L15251 on the back label and only 14,000 bottles were produced. You can safely ignore the erroneous tasting note from 2018 appearing in the Vintages Catalogue. Outstanding value - donít miss it! TASTING NOTE: The 2012 Cabernet Sauvignon Grand Cave was aged for 28 months in an 85/15 mixture of French and American oak (70% new, the rest second use). It comes in at 14.5% alcohol. When last seen, about two years back, this seemed pretty terrific and a big bargain. It still is. It has moderated some tannins and is a bit more approachable now. Mingling a bit of cream and velvet for texture, this has reasonable mid-palate finesse, fine focus and a big finish. It is also a bit too affected by its wood, and its power is still pretty evident. It can be approached, but that doesn't mean it is fully ready, in other words. As has been the trend with these submissions, an hour or so of air makes it tighter. Then, another hour brings it back around. It eventually shows well. Ultimately, the wood is a bit more of an issue than the tannins. This has a long way to go, perhaps longer than I think.
