Bright medium straw colour. Intense, resiny, spicy, stewed lemon-apple nose with lots of cedar. Dry, medium bodied, spicy, slightly bitter, baked lemon-apple flavours with a lingering, somewhat resiny, cedary finish. Not my style. Using Canadian oak is a bit of a gamble as it can have resiny notes resulting from a shorter oak stave aging process. Has 13% alcohol and 3 g/L residual sugar. TASTING NOTE: The Canadian oak used to craft this wine is sourced from trees grown along the Grand River in Brantford, Ontario, and the grapes are hand-picked and fermented using wild yeasts. It shows complex notes of smoked wood and pine cone, creme brulee, pineapple, golden russet apple and yellow plum. Bright acidity gives lift on the palate, and the finish is layered and lengthy. Pair with pork chops, or carnitas with apple slaw and pineapple salsa. (Vintages panel, Dec. 2017) Price $ 21.95
