Bright light straw colour. Somewhat spicy, bright, ripe lemon-apple nose with some faint toasty notes. Very dry, medium to medium-full bodied, well structured, ripe lemon-apple flavours with a lingering, very crisp, slightly toasty, faintly bitter finish. Very good effervescence. This 100% Chardonnay is partially barrel fermented and aged for 60 months in the bottle before being disgorged. It has 12.5% alcohol and 8 g/L residual sugar. TONY ASPLER / 90-points / TRY - Pale straw in colour; a nose of apple, lemon with a biscuit-shortbread note; medium-bodied, dry, citrus flavours ending of a note of licorice. CSPC 315200

Gold Medal winner at the 2017 All Canadian Wine Championships. TASTING NOTE: Made in the traditional method from 100% Chardonnay grapes grown at the estate's Short Hills Bench vineyard. Secondary fermentation in bottle is followed by a further 60 months of aging on the lees. Always one of the top sparklers made in Niagara. It shows a rich golden colour in the glass with a nose of brioche, lemon curd, fresh baked bread, baked apple, toast and mineral. It has an energetic mousse and a vibrant entry on the palate with lovely toasty but fresh flavours of apple, citrus, pear, lemon and vanilla toast that is all together an elegant, rich, deep and layered sparkling wine.
