LE SAUVAGE COGNAC AC Cognac
Vintage Assessments Tasting Note Producer AUGIER
Very bright light yellow colour. This Petite Champagne has a slightly spicy, faintly peppery, ripe, apple purée nose with some traditional fallen leaf, autumnal, Cognac notes. Very dry, medium bodied, harmonious, slightly spicy, ripe apple-plum flavours with a lingering, lemony, fairly high acid finish. Has 40.8% alcohol and still seem quite youthful. CSPC 497362

TASTING NOTE: Ugni blanc. Impeccably clean; the 18-carat gold color is dazzling. I really like this opening nose due to its generous fragrances of red apple, red grapes, and red plums - the fruitiness is undeniably charming; further inhalations after more air contact serve to enhance the richness and ripeness of the fruit while adding nuances of cinnamon and clove - a comely, fruit-driven bouquet that's almost impossible not to like. Entry is ripe, gently sweet, keenly spicy (cinnamon apple), and wrapped in a satiny texture that adds gravitas to the flavor profile; midpalate is nimble, but not austere, and delightfully juicy/grapy and pastry-like (apple strudel). Concludes in cascading waves of dried fruit tastes that are lightly spiced. One of the finest 100% Petite Champagnes I've had over the last 27 years of professionally tasting spirits. Highest Recommendation. Score - 5 Stars (out of 5) (F. Paul Pacult, Spirit Journal, Dec. 2016) Price $ 99.95
