Bright light straw colour. Attractive, very toasty, rip lemon-apple meringue nose with some mineral notes. Very dry, medium bodied, quite well structured, very slightly spicy, ripe lemon-apple meringue flavours with a faintly bitter lingering, high acid, gently toasty finish. This Vintages Essential has 12% alcohol and 4 g/L residual sugar. This is brilliant example of Ontario's prowess for sparkling wine. This is an elegant traditional method Chardonnay that delivers great depth of apple, pear, and bread tones, in a crisp and long package. In 2012, Cave Spring wine was awarded awarded a Lieutenant-Governor's Award for their Blanc de Blancs Brut Sparkling. |
