TASTING NOTE: Governo all'Uso is a 14th-century Tuscan technique in which around 30% of the grapes are allowed to remain unharvested while the harvested portion ferments for about three weeks. The initially unharvested grapes are collected in mid-October and used to begin a second fermentation. The wine is then aged in barrel. In this example, you get a wine of notable complexity, depth and character. Floral, soft and lush, this is an easy-drinking wine with impressive ripe and dried dark fruit, cedar and vanilla tones.
