Riesling's high natural acidity allows the grapes to retain their mouth-watering freshness as they hang on the vines into the cold winter months, developing riper fruit flavours along the way. This is essential for maintaining balance in the final wine, allowing the honey, mango and apricot notes to shine without a cloying sweetness. Try this Icewine with seared scallops with green-apple slaw. |
