Light yellow colour. Lovely, complex, intense, sweet and sour lemon drop nose with some honeyed caramel notes. Solid, sweet but balanced, rich, viscous, spicy, lemon meringue pie and caramel-vanilla ice cream flavours. Has excellent acidity on the finish that keep the wine balanced. It has 190 grams of residual sugar and 38% of the grapes were botrytis affected. |

Cave Spring cellars their Icewines for a full year in bottle prior to release. The 2006 vintage shows a superb balance of fruit and acids, suggesting excellent potential for mid-term ageing (6-8 years+). It is also enjoyable now with foie gras, lemon flan or aged cheeses. |
