Champagnes are nothing to SPIT at!
Toronto's sommeliers test the best in Champagne
Experts brought together for two bubbly tastings

There are tall ones, fat ones, short ones and lean
ones. They come in various garbs from très chic to vestment
ordinaire. They are all-powerful, because they alone possess knowledge
and taste to transform the ordinary to the extraordinary with simply a
twist of the wrist.
Yes, it’s the sommelier, that mystical tabernacle
of wine wisdom who knows the breadth of the restaurant’s cellar.
Internationally-speaking no establishment worthy of a second glance would
be without one. Well almost anyway, because here in Toronto our
gastronomic roots were not imbedded in fine wine but rather whiskey.
In fact, the sommelier is still quite a rare bird in
most of our restaurants. Worse yet, until recently you could find them
doing double duty, almost everything from managing to clearing tables!
Fortunately, some of our more enlightened establishments have given
sommeliers the recognition they deserve.
Historically, the best were French persuasion. Well
at least that was true up until the 1980’s when Italian cuisine, its
wines and their sommeliers suddenly became fashionable. Today, women have
broken through the chauvinistic barriers and have joined the cutting edge
of wine selection.
All of this became apparent when I recently decided
to seek out a fresh take on critiquing wines. In essence, I wanted to
discover what went through the minds of the very people who actually had
to buy and sell the stuff I recommend. And so I set out on a new venture.
I called around and instantaneously put together a
small band of dedicated professionals from Canada’s leading restaurants.
These were people who had successfully passed accredited sommelier
programs at considerable personal expense. They included Jamie Kennedy from the ROM, Peter Costello from Accolade, Prego’s Francois Morissette,
Romuald Toulon from the Four Seasons, Ruben
Elmer from Auberge du Pommier, James
Drummond of the Granite Club, David Partridge of Jump, Steve Christian of
Reds and Jay Fallah (a British Wine & Spirit Trust Diploma
holder completing the Master of Wine program). All in all 14 individuals
willing to sit down and spit. And what better a name for this group than SPIT – Sommeliers & Professional Independent Tasters

The objective is a sharing of passion, knowledge and
insight for that elixir known as wine. And what wines. Our first tasting
consisted of 38 Champagnes plus one pretender to the throne – worth in
excess of $3,000. In order to put everyone on equal footing, I designed an
easy-to-use Champagne tasting sheet which
transformed numeric systems into a simple descriptive system. The
components (nose, mouthfeel, palate/flavour, finish) and the overall
quality was broken down into seven possible rankings: Below
Average, Average, Above Average, Good, Very Good, Excellent and
Outstanding.
In addition, sommeliers are asked to describe the
colour, size and intensity of bubbles, acidity/balance and
maturity/evolution. Finally, they are asked to describe the style of the
Champagne and what would be the ideal food match. There was even a space
for the estimated price of the product being tasted (big surprises here).

A total of 5 to 8 wines were tasted in blind
flights. The wines in each flight were totally secret. Once a flight
tasting was finished, each sommelier one-by-one would discuss the
Champagne being tasted without its identity being revealed. My job was to
try an tally each round. Once everyone had made their comments, the
identity would be revealed. This system worked well but with 14
participants, it’s quite time intensive.
Our round table comparative blind tasting consisted
of 7 flights with the first three taking place at the Windsor Arms Hotel,
the balance on Sunday morning at Canoe led by master sommelier Dan Volway.
If any group has made a commitment to ensuring that every one of their
restaurants has a professional sommelier, it’s the Oliver-Bonacini
owners.
And the results of seven hours of tastings? Well it
was dazzling. Our first flight of five Chardonnay-based Blanc de Blancs
Champagnes opened up with a fairly complex, toasty Salon 1985 Cuvée S Champagne at $155
from the Classics Catalogue. While its fairly robust taste didn’t set
every palate ablaze, we felt that it would do divinely with freshly
poached whitefish. This is a food Champagne and could be compared to a
Grand Cru Chablis.
How different it was from the elegant, smooth,
fresh, grapefruit-melon flavours of Roederer 1994 Crystal Brut ($189
Vintages Essentials) which I only discovered later had 55% Pinot Noir!
Bring on the ceviche chanted one enthralled taster. Even more surprising
was the fact that I was not alone actually awarding the extremely well
balanced, ripe, lemon blossom tinged Roederer
1994 Blanc de Blancs an ever slightly higher score (although it
only costs a measly $58 in the Classics Catalogue) making it a best buy
Another discovery was Delamotte
1995 Blanc de Blancs fresh from last month’s Vintages
release. It had complex, earthy, very faintly sweetish
flavours making it well worth its $48.95 price tag. Perfect with
ceviche commented one sommelier! We all nodded.
Then there are the
everyday Champagnes for every taste. Fortunately, only one drew gasps from
the assembled – the new consignment sparkler Pommery Extra Dry “Pop” which
comes in a small blue bottle (4.6 ounces) at $14.03. In the words of one
sommelier “it’s obviously made for young imbibers whose accumulation
of discretionary income has developed much faster than their taste.”
Also disheartening were the
appearance of four cork afflicted Champagnes - not a good thing at these
prices.
My winner of the cheap and
cheerful set was Piper-Heidsieck
Brut with its surprisingly complex, biscuity taste. It’s
available on the General List at only $39.90. In terms of group ratings,
however, the Charles
Heidsieck Brut Reserve at $44.95
gave the former a run for the money with what one sommelier described
as delicious “buttered scone flavours.” For those with a serious
thirst, another well-priced tasty treat is the magnum-sized Deutz
NV Brut Classique with its bright, crisp favours (Vintages
Holiday Gift section at $99.90).
Rosé Champagne is one of my favourite libations and
for my palate the extraordinary 1989 Veuve Clicquot Trilennium Reserved Cuvée
Rosé was without compare. Its sublime toasty nose and creamy,
ripe, gentle plum flavours showed lovely persistence. This bubbly has been
sitting in the Vintages section since October 1999 and only a few bottles
remain. A steal at $85.95, it’s still available for private order via
the LCBO and hopefully, Vintages will pick up the gauntlet and order more.
Keep in mind that only a miniscule quantity of this 1/3 Chardonnay and 2/3
Pinot Noir bland was produced. It has great creamy mouthfeel and a very
low dosage - only .7% residual sugar.
Ditto for it’s twin , the equally stunning
1989 Veuve Clicquot Trilennium
Reserved Cuvée Brut (released in September 1999 at $84.90 with
only some 100 bottles remaining in Vintages).
Here’s a bubbly that’s so good that at least one sommelier rushed
the Vintages store to scoop up some bottles for their own cellar. It’s
rich, toasty, goût anglaise
flavours go one forever in the mouth! The stunning texture has only .6%
residual sugar. A triumph in winemaking at a remarkable price.
Moving to the deluxe category, the Krug
Grande Cuvée Brut ($149.95 at Vintages) was a favourite with
its mouthfilling, exceedingly
toasty flavours go one and on. A mini-feature on Remi Krug Champagnes will
appear next week. Finally the ever-accessible, elegant, well balanced Moet & Chandon 1993 Cuvée
Dom Perignon at $160 is
the kind of bubbly that everyone can easily enjoy.
All in all, we discovered some gems. We all know
what constitutes good Champagne. Indeed, it was nice to find an
exceptional new world sparkler, Argyle
1989 Extended Tirage Brut from Oregon’s Willamette Valley. It
won high praise from several tasters when positioned beside “the real
thing.” Only 1,011 cases of this 60/40 blend of Pinot Noir and
Chardonnay were produced. It will be available in the New Year from Edwards
Wines (416-405-8989) at approximately $55. As they say, beauty is in
the eye of the beholder – what appeals to one may not appeal to another.
But when it comes to Champagne, when it’s good, it’s very, very good!

Two useful soft cover books are available which both worth checking out. I
highly recommend the Millennium Champagne & Sparkling Wine Guide a terrific
recently-published large pocket-sized comprehensive compendium by Tom
Stevenson with detailed numeric evaluations of bubblies from around the
world . You might also want to pick up The
Champagne Companion; The Authoritative Connoisseur’s Guide ($19.95)
by Michael Edwards which went to print two years ago.
LCBO
Listings: There are 19 items on the LCBO
General List. In addition there were 10 items in the Fall Classics
Catalogue, a total of 15 in the twelve Vintages releases this year plus a
handful in Vintages Holiday Promotion. As of December 2nd, there were 29
items in the warehouse (most included in the previous list). Thus, I think
there are approximately 70 or so Champagnes still available at the LCBO. The
trouble is, it is impossible to get any comprehensive list of items
available via the LCBO infoline or website. A
very scary situation.
SAQ Listings:
By contrast, the SAQ offers 160 items easily accessible through their
website. Here is a summary. Let me note in passing, that the SAQ is
taking an aggressive marketing plan that (unlike the LCBO) doesn’t rely
on being subsidized by the wine agents or their principals. On December 6th,
for instance, for the second year in a row from 4 to 11 pm you would
receive a free bottle of
Champagne for every $200 spent at the SAQ – your choice of seven
brands at around $40 apiece! And if you happen to be in Montreal next
week, all gift packages are discounted 40% (again without hitting up the
suppliers). Wouldn’t it be great if the LCBO could share some of its
largess with its shareholders?
